3 Micheline Star Clare Smyth to make its debut in Sydney, Here’s What to Expect.

Whether it is her appearance on TV shows like Netflix Final table or revolutionary dishes, Clare Smyth has taken the culinary world by storm. And now this globally acclaimed British chef having scored 3 Michelin stars this year and being the first female achieving this accolade in the United Kingdom, is now joining the list of world-class dining restaurants in Crown Sydney, marking the debut of Oncore July this year.

Declared by the Queen of England as a distinguished member of the order of the British empire, Smyth has substantial culinary experience including handling the role of chef-patron in Gordon Ramsey’s three Michelin star restaurant and managing her very own three Micheline star establishment Core.

Smyth is dedicated to producing outstanding dishes by sourcing sustainable products. She has achieved great success in her London diner Core and is now making her way to Sydney. Set at level 26, gastronomers flabbergasted by the breathtaking views of the Sydney Habour Bridge and the Opera House while enjoying a one-of-a-kind degustation.

The quality and diversity of the produce available in Australia is incredible. I look forward to spending a lot of time there further exploring its food and wine regions to create our menu which will showcase the best produce sourced from Australia’s most dedicated farmers and food producers,” says Smyth.

Oncore will celebrate the wonderful produce in Australia and take inspiration from Sydney iconic attractions like the Sydney Habour Bridge. Inspired dishes include ‘Beef and Oyster’ — featuring English Victorian-era beef, oyster, and Irish stout pie. It will also showcase a selection of classic dishes from Core including its star dish — ‘Potato and Roe’, a Charlotte potato slow-cooked for 24 hours then topped off by smoked trout and herring roe, served with beurre blanc. These dishes demonstrate Smyth’s belief in adapting sophisticated cooking into minimalistic dishes. Wine is another quintessential element in Oncore, housing over 3000 bottles in its wine cellar including exquisite products from Australia, of course, and many more from all four corners of the earth. Having worked together previously in Gordan Ramsay’s three Michelin star restaurant, New Zealand head chef Alan Stuart will work hand-in-hand with Clare Smyth to help develop her Sydney location.
