While tiramisu is a humble sweet treat that is familiar to all Italians, there is, apparently, enough global fondness that Australians, now are taking our own take on these delectable lush squares. The contender here is Clifford Luu, an innovative baker determined to bring a smile to our faces while we are haunted by draconian restrictions. He is introducing 3 inconceivable confections: Lemon & coconut, Lotus Biscoff, and Vietnamese coffee tiramisu, all homemade to order with limited weekly orders.

While these three guilty pleasures are unique on their own. The lemon & coconut includes pillowy-soft sponge cakes jammed between a generous smear of mascarpone and lemon curd then coated in delightfully crips shards of coconut and lemon liqueurs, Mmmmm.

Oh yes, Biscoff biscuits. It is no longer confined to coffee dipping but also tiramisu, who knows! Belgium cookie butter Biscoff biscuit spread is smothered generously on layers of coffee-drenched sponge cake, along with Biscoff ganache, creamy mascarpone, and almond liqueur. This sweetened lasagna is then finished off with a blanket of Biscoff biscuits and dusty cocoa powder that are well blended into this decadent treasure box.

Vietnamese coffee tiramisu transforms you into the streets of Vietnamese hawkers as you savour the rich and dark notes of its coffee. The mascarpone is incorporated with sweetened condensed milk while sponge cakes are soused with rich Vietnamese coffee. With the addition of Hennessy Cognac and you have just got yourself a boogie dessert.

We’d just love to say bravo for Clifford’s ingenious desserts and for spreading his cocoa (or coconut) dusted love across Australia. As the pandemic continues to rip through the community, at least we are certain that there is some tiramisu to help sweep away our lockdown blues.
